These Mini Strawberry Cheesecakes are the perfect individual desserts, combining a creamy cheesecake filling with a sweet and tangy strawberry topping. Ideal for parties or special occasions, these cheesecakes are sure to impress.
Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
2 tbsp unsalted butter, melted
For the Cheesecake:
2 packages cream cheese, softened to room temperature (8 oz each)
½ cup sugar
1 tsp vanilla extract
2 large eggs
For the Strawberry Sauce:
1 cup chopped strawberries (equal to about half a 1 lb carton)
12 whole strawberries (tops cut off)
⅓ cup sugar
1 tsp vanilla extract
Squeeze of fresh lemon juice
Directions
Preheat the Oven to 350ºF.
Prepare the Crust: Line a regular-sized muffin pan with 12 muffin liners. In a mixing bowl, combine the graham cracker crumbs and melted butter with a spatula until the mixture resembles coarse sand. Place 1-2 tablespoons of crumbs in each muffin cup and use a 1/3 cup measure (or similar) to press the crumbs down firmly. Bake the crust for 5 minutes. Remove the pan from the oven and allow it to cool while preparing the cheesecake filling.
Prepare the Cheesecake Filling: In a mixing bowl, beat the cream cheese with an electric mixer until smooth, about 1-2 minutes. Add the sugar and vanilla extract and beat until smooth. Beat in the eggs one at a time. Place a little more than 2 tablespoons of cheesecake batter in each muffin cup.
Bake the Cheesecakes: Bake for 16-18 minutes, or until the center of the cheesecake is only slightly jiggly. Allow the cheesecakes to cool to room temperature, then place them in the fridge for at least 4 hours to chill before serving. If refrigerating overnight, loosely cover the cheesecakes with plastic wrap.
Prepare the Strawberry Sauce: In a small to medium-sized pot over medium heat, combine the diced strawberries, whole strawberries, sugar, vanilla extract, and a squeeze of fresh lemon juice. Bring to a boil, stirring occasionally. Allow the mixture to boil for 7 minutes, then continue cooking until the sauce thickens, about 7 additional minutes. Transfer the sauce to a container and store it in the fridge to cool.
Assemble the Cheesecakes: Place a whole strawberry from the sauce on each cheesecake and top with a spoonful of the strawberry sauce. Serve and enjoy.
