Mexican Chicken With Cheese Sauce
Ingredients:
4 chicken breasts
1 teaspoon of black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
2 tablespoons of the olive oil
1 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
1 cup of thick cream
1/4 cup of milk
2 tablespoons of butter.
1 jalapeño, seedless and chopped
1/4 cup chopped fresh cilantro
Sliced lemons to serve
Instructions:
Season chicken breasts with cumin, pepper, garlic powder, onion powder, salt
and pepper.
In a large skillet, heat the olive oil over medium-high heat. Cook the
chicken breasts for 5-7 minutes on each side, or until golden brown and well
cooked. Pull the chicken out of the pan and reserve.
In the same pan, melt the butter over medium heat. Add the chopped jalapeño
and cook for 2-3 minutes until tender.
Reduce heat to low and add heavy cream and milk, mix well.
Insert cheddar cheese and mozzarella cheese, stirring until melted and the
sauce is smooth and creamy.
Pan seared chicken breasts and cover with cheese sauce. Cook for 2-3 more
minutes until chicken is well covered and hot.
Serve hot chicken, sprinkled with fresh chopped cilantro and served with
lemon slices.
