Banana Bread Brownies
Ingredients:
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium bananas)
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup cocoa powder
1/2 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips (optional)
Directions:
Preheat oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with
parchment paper.
In a large bowl, whisk together the melted butter and granulated sugar until well
combined.
Beat in the eggs, one at a time, followed by the mashed bananas and vanilla
extract.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips, if using.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out
mostly clean (a few moist crumbs are okay).
Allow the brownies to cool in the pan before cutting into squares and serving.
