Homemade Vanilla Pudding
Ingredients:
- 1/4 cup cornstarch
- 1/4 cup sugar
- 1/4 teaspoon salt
- 2 cups milk
- 1 large egg
- 1 large egg yolk
- 1 tablespoon vanilla extract
- 2 tablespoons unsalted butter, cut into small pieces
Instructions:
1. In a medium saucepan, whisk together the cornstarch, sugar, and salt.
2. Gradually whisk in the milk until smooth.
3. Bring to a boil over medium heat, stirring constantly.
4. Reduce heat to low and simmer for 1-2 minutes, or until thickened.
5. In a small bowl, whisk together the egg and egg yolk.
6. Gradually whisk a few spoonfuls of the hot milk mixture into the egg mixture.
7. Pour the egg mixture back into the saucepan and cook for 1 minute more, stirring
constantly.
8. Remove from heat and stir in the vanilla extract and butter.
9. Pour the pudding into a serving dish and cover with plastic wrap.
10. Refrigerate for at least 4 hours before serving.
