Peach Curd Spread 



Ingredients:

4 ripe peaches, peeled and pitted

1 cup granulated sugar

1/2 cup unsalted butter, cut into small pieces

4 large egg yolks

1/4 cup fresh lemon juice

1/2 tsp vanilla extract

Pinch of salt


Instructions:

Puree the Peaches:

In a blender or food processor, puree the peaches until smooth.


Cook the Peach Mixture:

In a medium saucepan, combine the peach puree, sugar, butter, egg yolks, lemon 

juice, and salt.

Cook over medium heat, stirring constantly, until the mixture thickens and coats the 

back of a spoon, about 10-12 minutes.


Strain the Curd:

Remove from heat and strain the mixture through a fine-mesh sieve into a bowl to 

remove any lumps.

Stir in the vanilla extract.


Cool and Store:

Allow the peach curd to cool to room temperature.

Transfer to a jar or airtight container and refrigerate until ready to use.
