Quinoa, Black Bean, and Corn Salad: A Vibrant and Refreshing Dish!


Ingredients:

- 1 cup cooked quinoa

- 1 can (15 ounces) black beans, rinsed and drained

- 1 cup frozen corn, thawed

- 1/2 cup chopped red onion

- 1/2 cup chopped green bell pepper

- 1/4 cup chopped fresh cilantro

- 1/4 cup chopped fresh parsley

- 1/4 cup olive oil

- 2 tablespoons lime juice

- 1 teaspoon chili powder

- Salt and pepper to taste


Directions:

1. In a large bowl, combine the quinoa, black beans, corn, red onion, green bell pepper, cilantro, and 

parsley.

2. In a small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper.

3. Pour the dressing over the salad and toss to coat.

4. Serve immediately or refrigerate for later.

5. Enjoy a healthy and flavorful salad that's perfect for lunch, dinner, or a snack!
